We know you've always wondered what is so captivating about Yuri's favorite food: Pork Katsudon. It's too expensive to fly all the way to Japan so you've got to improvise, right? Follow this recipe to make yourself a Pork Katsudon bowl at home!

◒ 3 Cups of rice
◒ 2 boneless pork chops
◒ Salt & pepper (Adobo or Complete Seasoning work well too)
◒ 1 beaten egg for breading
◒ 2 eggs
◒ 1 cup of panko bread crumbs
◒ 1/2 cup of dashi stock (Chicken or vegetable stock work well too)
◒ 1 tbsp. of soy sauce
◒ 2 tsp. of sugar
◒ 2 tbsp. of mirin (A good substitute is dry white wine or rice vinegar)
◒ 1 small onion
◒ Optional: 1/4 cup of peas for topping or scallions/green onions
◒ Cook the rice to your preference
◒ Use a meat mallet to pound the pork to about 1/4 thickness
◒ Season the pork chops with salt and pepper (or alternative seasoning), and cover with flour
◒ Heat up the oil in a deep pan on the stove. Insert enough oil to cover the pork when you cook it. You can also use a deep fryer if you feel inclined.
◒ Dip the pork into the beaten up then cook with panic crumbs
◒ Once the oil is hot (to check heat level: wet your hands and flick it into the oil from a safe distance. If it sizzles, the oil is ready.) Fry until golden brown on each side.
◒ Once well cooked, remove them from the oil & set them aside on a plate with paper towels to absorb excess oil.
◒ Add the stock, soy sauce, mirin and sugar to a pan big enough to hold both pork chops & simmer. Add the onions and cover the pan with a lid.
◒ Once the onions are translucent, slice the pork katsu and carefully place on top of onions
◒ Beat the remaining two eggs and pour them on top of the pork . Cover the pan with the lid.
◒ Begin portioning the rice into two bowls
◒ Once the eggs are cooked, slide/pour the sauce, onions, pork, and egg onto the rice in the bowl.
◒ Top with scallions/green onions or peas to garnish
